Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.In a large bowl, combine the potatoes, mayonnaise, sweet pickle relish, sugar, onion, mustard, vinegar, celery, pimentos, carrot, parsley, pepper and salt.
